Ingredients:
- 1 cup chopped broccoli
- 3 cloves chopped garlic
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- 1 cup canned corn
- 1/2 cup soy sauce
- 2 tablespoons organic peanut butter
- 2 cups white rice
Directions:
- Place 1 tablespoon of coconut oil onto a pan on medium heat.
- Place broccoli, garlic, onions, peppers, and corn into the pan. Mix vegetables together and let cook for 4 minutes.
- Sprinkle some red chili flakes on top of the vegetables if you would like.
- Pour soy sauce over the vegetables and stir.
- Add peanut butter and stir until fully incorporated.
- Let cook for 2 minutes on high heat.
- Take the vegetables off the heat and let them cool down for 2 minutes.
- Add vegetables to cooked white rice, stir, and enjoy!
